Street Food #5
Hey, friends 👋.
This is a newly opened ramen restaurant in Xindian. It probably serves the best ramen in Xindian.

The Tonkotsu broth tastes pretty rich and creamy, with tons of garlic and subtle traces of lard. It’s not too salty and goes well with the other ingredients. The noodles are al dente, and you can get a bowl of extra noodles when you are halfway through. You can choose from thick and thin noodles, both of which are perfect. The thick noodles are a bit firm, though, and the thin noodles are, according to the chefs, traditional in Japan. The chashu is pretty huge, thick, and tender. Everything in the bowl complements the broth pretty well.

You can put the lemons in when you are halfway through. They make the noodles a lot more refreshing.

This is definitely worth a revisit, although the prices are a bit high.
